Did you know that the omelette is an international symbol of friendship? Walk up to a Frenchmen, who are notorious for disliking Americans, offer an omelette, any old kind will do, and be prepared to have a friend for life. It's that easy. The power of the omellete is immense.

Since 1985, when they held their first omelette celebration, Abbeville, LA, has been a member of the worldwide fraternity of the omelette. They joined the sisterhood of cities such as Bressieres, France; Quebec, Canada; and Malmady, Belgium, who send ministers of the omelette to Abbeville every November to help the locals cook the world's only Giant Cajun Omellete. This Omelette of Friendship, as it is called, is given away to all who attend. Ingredients? To start try 5,000 eggs, 50 lbs. onions, 75 bell peppers, 6 ½ gallons milk, 52 lbs. butter, 3 boxes of salt and 2 boxes of black pepper.

The legend of the omelette dates back to the times of Napoleon. When he and his army were traveling through the south of France, they decided to rest for a night near the town of Bressieres. Napoleon dined on an omellete that evening. He thought it such a culinary coup that he ordered that all of the eggs in the village be rounded up for a giant omelette to feed his troops. About 5,000 people show up every year for this free event.
