Belize - the only English speaking country in Central America, though you'll get by just famously with Spanish - celebrates its independence from the Spanish, then the Brits, with a three-week blowout encompassing St. George's Caye Day on September 10th and leading up to the finale, Belize Independence Day on September 21st.

There's the usual mix of ceremony, parades, fireworks and general all-night, merry-making in the streets that goes with the Caribbean/Central American territory so pack light and don't expect too much sleep.
